“Souper” Supper Champs Are Really Cookin’
One team of first semester, first year Culinary Arts students in the local Souper Supper contest knows the taste of victory is an aromatic blend of onions and apples. It’s called “Granny’s Apple Crisp Bisque,” and it’s a great holiday recipe that won the People’s Choice Best Overall award, beating 40 competing soups.
Granny’s Apple Crisp Bisque - A Winning Recipe of the HGTC Culinary Team 2013:
Soup: Make a roux with 2T flour and 2T butter. When medium brown, add ½ c. chopped onion and sauté three minutes on medium low until clear. Add three chopped apples, 2 c. apple cider, 2 T brown sugar, 1/2 t. cinnamon, ¼ t. fresh ground nutmeg, dash of Star Anise and Chinese Five Spice. Cook on medium until apples are soft. Remove from heat. Add one t. vanilla and one-half cup heavy cream. Keep warm.
Crisp: Mix one stick of butter, 1 c. oatmeal, ¼ c. brown sugar, 1 t. cinnamon and ¼ t. nutmeg. Broil briefly until brown.
To serve: Pour soup into ramekins and garnish with crisp. YUM!
